A holder, designed for rational positioning of different items of equipment used to monitor the wine-making process, consists of a series of radial arms (1), each fitting in its own support (18) in the neck of the vat. The arms are equipped with brackets (4) or columns (14, 16) for a venturi tube (6) and a diffusor (5), a regulator/programmer (15) and hot and cold water feeds to a heat exchanger. One of the arms is equipped with a housing for positioning a temperature probe, equipped with a handle (13) for shutting off the probe tube and allowing its depth to be adjusted to the required level. The various items of equipment are attached to the arms by means of smooth or threaded holes.
