Soluble mannoprotein powder

Soluble mannoprotein powder and its production are new. Soluble mannoprotein powder comprising: (a) dry substances content at least 92%, preferably at least 95%; (b) total glucides content (dry wt.) 43-82%, preferably 50-70%, with at least 80% and preferably at least 90% in form of mannose chain; (c) phosphor content, expressed in P2O5 (dry wt.) 1-5.75%, preferably 3-4.5%; (d) turbidity of 1g/l aqueous solution, measured at pH 3.5 by nephelometry up to 6 NTU, preferably up to 3 NTU; (e) turbidity of 1g/l hydroalcoholic solution, measured by nephelometry at pH 3.5 and at 12 degrees GL up to 35 NTU, preferably up to 10 NTU, and f) protein content (per dry wt.) 20-50 (preferably 29-50)%. Independent claims are also included for the following: (1) process of production of soluble mannoproteins, comprising following stages: (a) production of suspension of yeast cells walls having characteristics identical or similar to the cells of suspension of yeast cellular walls obtained after autolysis of such cells, solubilizing 50-73 (preferably 50-70)% of dry substances of yeast cells; (b) controlled hydrolysis of yeast cell walls in such way as to combine selective solubilizing of mannoproteins and separation of solubilized fraction containing mannoproteins and colloidal macromolecules; (c) separation of insoluble fraction; and (d) purification of solubilized fraction, with elimination of colloidal macromolecules, followed by final concentrating and optional drying; and (2) soluble mannoprotein powder obtained by process as claimed.
