摘要 The present invention relates to a method for manufacturing marinade for cold buckwheat noodles and spicy buckwheat noodles by using houseleek which is attached to and grows on the surface of mountain rocks and is developed as health food in recent days. Components contained in houseleek are made into marinade of buckwheat noodles capable of being easily taken by everyone in our food life, so as to be used as the marinade when taking cold or spicy buckwheat noodles. Since the components contained in the houseleek and useful to a body are taken by taking the buckwheat noodles, the components of the houseleek can be taken. Unique strong sour taste and flavor of the houseleek are minimized, so everyone liking the buckwheat noodles can enjoy the houseleek and aid to health is provided. According to the present invention, the method comprises: a first washing process of washing houseleek captured in a living state to wash the houseleek with flowing water; a second dewatering process of naturally removing moisture from the houseleek by using a dewatering plate made of a mesh; a third heating process of heating the houseleek completing the dewatering process simultaneously with water in a water heater; a filtering process of filtering residues from a liquid extract completing the heating process; a kneading process of pulverizing the liquid extract of the houseleek acquired in the filtering process together with hot chili (Chungyang chili) powder, mild general chili powder, onion, pear, and garlic, inserting the pulverized mixture together with soy sauce, sugar, Orostachydis Herba vinegar, and an Orostachydis Herba extract into a kneader, and mixing the mixture; and an aging process to age mixture paste.
