PROBLEM TO BE SOLVED: To provide a method for producing an yeast extract free from yeast odor, having good taste, flavor and color and rich in palatability. SOLUTION: This method for producing an yeast extract free from enzyme odor and rich in palatability feathers extracting yeast, dried yeast or yeast extract with methanol or ethanol having <=70% water content and subjecting the resultant extracted solution to absorption treatment with activated carbon. Yeast beverages or foods are prepared by using the resultant yeast-extract or yeast extract powder. |
