摘要 The present invention relates to a method of preparing fermented metabolome capable of enhancing immunity by using a fermented strain, and more particularly, to a method of preparing fermented metabolome by fermenting yam, ginseng, and bellflower by using a fermented strain. According to the present invention, the method of preparing fermented metabolome for enhancing immunity is characterized by including: a first step for pure culturing any one fermented strain selected from edible fungi, mushroom fungi, yeast, Bacillus subtilis, a mixed strain to prepare a pure culture solution; a second step for pre-processing and sterilizing the fermented raw material; a third step for adding the pure culture solution prepared in the first step into the sterilized fermented raw material; a fourth step for culturing the fermented raw material which has been added with the pure culture solution in the third step, in an incubator with a relative humidity of 70-90% and water content of 30-60% to prepare a biotransformation body; a fifth step for adding a carbon source and a nitrogen source to the biotransformation body of the fourth step; a sixth step for sterilizing, at 100-121°C for 10-20 minutes, the biotransformation body which has been added with the carbon source and the nitrogen source in the fifth step; a seventh step for preparing a biotransformation extract extracted by adding 10 parts by weight of any one selected from water or alcohol with respect to 1 parts by weight of the sterilized biotransformation body of the sixth step; an eighth step for concentrating the biotransformation extract of the seventh step under reduced pressure; and a ninth step for freeze-drying the biotransformation extract which has been concentrated under reduced pressure in the eighth step.
