PROBLEM TO BE SOLVED: To provide a method for producing an aqueous olive extract which is reduced in the amount of muddiness and floating matters to the extent that it is free from a practical trouble.

SOLUTION: This method for producing hydroxytyrosol-containing aqueous olive extract comprises a clearing process of bringing an aqueous non-transparent component selected from the group consisting of aqueous residues after collecting oil from a compressed liquid of the olive tissue and an aqueous composition prepared by adding water to the concentrate of the aqueous residues into contact with diatomaceous earth.
