PROBLEM TO BE SOLVED: To provide a method for producing modified oil and fat in which acid value is low suppressed, and useful for producing fatty acid ester, and a method for producing fatty acid ester using the same.SOLUTION: Provided are a method for producing modified oil and fat and a method for producing fatty acid ester using the same. The method for producing modified oil and fat includes a process of mixing raw material oil and fat and glycerin derived from an enzymatic catalyst method, in which the glycerin derived from an enzymatic catalyst method is a by-product in fatty acid ester production reaction using an enzymatic catalyst. According to this method, modified oil and fat suppressed low in acid value can be provided without depending on the elevation or reduction of the acid value of the raw material oil and fat. In this way, desired fatty acid ester can be produced by evading or reducing saponification in the reaction system. The obtained fatty acid ester is useful, e.g., for a biodiesel fuel or the constituting component thereof.SELECTED DRAWING: None |
