FIELD: food industry.SUBSTANCE: invention relates to food industry, namely to technology of producing sauces. Ground pumpkin seed extraction cake is soaked in drinking water at a ratio of about 1:5 and maintained for swelling. It is mixed with cherry plum puree, quince puree, sugar and salt. It is cooked till the content of dry substances is about 22 %. It is followed by adding dill seeds, coriander, cloves, red hot pepper and black hot pepper, CO-extract of currant leaves and wormwood. Then the product is packed sealed and sterilized.EFFECT: method enables to reduce the after-taste of pumpkin seeds in the sauce without changing its adhesion properties.1 cl |
