The purpose of the present invention is to provide germinated brown rice with improved eating and cooking quality. The germinated brown rice includes, as a components of germinated brown rice, direct reduced sugar components in a more increased amount than the amount in raw brown rice at least, and the germinated brown rice contained alpha-form starch to which some of starch are converted if needed. |
