摘要 PURPOSE:To prepare the subject chocolate easily meltable in the palate and having excellent shape-retainability with heat, moderate flowability and good workability by adding a cacao fat, a medium-melting fraction of palm oil and a natural wax to an oil and fat component. CONSTITUTION:The objective chocolate is a solid chocolate prepared by a tempering treatment process. The chocolate is produced by using an oil and fat component consisting of (A) a cacao fat and (B) a medium-melting fraction of palm oil and adding (C) a natural wax having a melting point of >=60 deg.C to the oil and fat component. Preferably, the chocolate is further incorporated with (D) a milk fat to attain a total oil and fat content of 40-60wt.% in the chocolate base.
