摘要 <p>PURPOSE:To provide a method for producing a shochu (low-class distilled spirit), capable of shottening a conventional brewing period required for the conventional method and obtaining the shochu high in the quality and rich in the flavor. CONSTITUTION:This method for producing a shochu comprises converting starch contained in a raw material barley into alpha-starch, adding immersion water and an enzyme aqueous solution containing a prescribed amount of at least an enzyme selected from a group consisting of cellulase, protease and amylase enzymes in a total amount of 20-60wt.% (based can the raw material barley) to the raw material barley containing the alpha-starch, again subjecting the starch contained in the raw material barley having once been converted into the alpha-starch to the treatment for converting into the alpha-starch, and subsequently using the obtained raw material barley containing the twice treated theta-starch as a pouring raw material and/or a malt raw material.</p>
