PURPOSE:To obtain processed non-glutinous rice and rice cake or GYUHI (kneaded product of glutinous rice flour, white sugar and millet jelly)-like material excellent in viscoelasticity, etc., using non-glutinous rice or non-glutinous flour as a raw material. CONSTITUTION:The objective processed non-glutinous rice is obtained by using non-glutinous rice or non-glutinous rice flour as a raw material, adding water of >=3 times by weight based on the raw material thereto, heating the rice or rice flour to >=70 deg.C to prepare rice gruel and drying the rice gruel at <=200 deg.C using a heat drum system, an extruder system or a spraying system. The objective non-glutinous rice cake and GYUHI-like material are obtained by using this processed non-glutinous rice. Rice cake or GYUHI-like material having excellent physical properties, which has hitherto been difficult to prepare, can be obtained using non-glutinous rice as the raw material and the viscoelasticity is retained also in freezing. |
