FIELD: food production technology. ^ SUBSTANCE: preparation of components of the recipe is performed including cutting and freezing of asparagus and tarragon. The listed components are mixed without access of oxygen with melted butter and table salt producing garnish. Cutting, packing, hermetic sealing and sterilising of trout fillet, garnish and fish broth are made. ^ EFFECT: higher digestibility compared to similar culinary dish. |
