FIELD: food production technology. ^ SUBSTANCE: method involves cutting and frying in margarine of beef liver, cutting and browning in margarine of bulb onion and mixing the said components with salt for minced meat preparation. Cutting and chopping of beef and duck, mixing it with drinking water, salt and black bitter pepper is carried out for cutlet mass preparation. It is formed in mince, wetted in chicken eggs, coated with dried and finely ground breadcrumbs and fried in melted butter to prepare zrazy. Runner beans are cut and frozen and mixed without oxygen access with table salt for garnish preparation. Prepared zrazy, garnish and melted butter are packed in containers, sealed and sterilised. ^ EFFECT: higher digestibility compared to similar culinary dish. |
