摘要 <P>PROBLEM TO BE SOLVED: To produce a dried product restoring taste having pungent flavor obtained when mashed fresh Japanese radish when adding water to the dried product and further to utilize such the dried product as a lipid metabolism improving agent. <P>SOLUTION: Japanese radish is impregnated with saccharide and then, the mixture is dried at &le;60&deg;C so as to has &le;10% water content or Japanese radish is sliced into &le;3 mm thickness and then dried so as to have &le;10% water content within 30 hr at &le;50&deg;C to produce the dried product of Japanese radish.
