PURPOSE:To remarkably improve the water absorption rate, shorten the dipping time and improve the taste of cooked rice by washing rice grains, then primarily steaming the washed rice, dipping the steamed rice in water, secondarily steam the dipped rice grains and efficiently and continuously cook the rice grains. CONSTITUTION:This method for continuously cooking rice is to wash rice grains, then directly primarily steam the washed rice grains, dip the primarily steamed rice grains and secondarily steam the dipped rice grains. Furthermore, this apparatus for continuously cooking the rice comprises, e.g. a rice washing device 2 for washing the rice grains, a primary steaming device 3 for directly pregelatinizing the washed rice grains, a dipping device 4 for dipping the pregelatinized rice grains and a secondary steaming device 8 for pregelatinizing the dipped rice grains again. The apparatus is preferably used in the method for continuously cooking the rice. |
