A composite food product 1 comprising an edible structural component 2 and inulin as a binder 3, the product further comprising konjac mannan (E425 (ii)). The composite food product maybe a food bar, and comprise from 1 to 5 weight percent konjac mannan based on the total weight of the composite food product. Preferably, the food product comprises from 5 to 25 wt % inulin, based on the total weight of the food product. The food product may also comprise maltodextrin, in an amount of 5 to 25 wt % of the total weight of the composite food product. The edible structural component may comprise cereal such as oats, barley, wheat or rice, or fruit. The food product may also comprise humectants such as glycerol or sorbitol, flavouring agents or colouring agents. Also claimed a method of manufacturing such a composite food product. |
