PROBLEM TO BE SOLVED: To provide a water level control method of a steam separator for controlling a water level of the steam separator on the basis of a speed of steam produced by a boiler, separating moisture from the steam produced by the boiler to stably obtain the steam of high quality and high dryness, and stably operating the boiler. SOLUTION: This method of controlling the water level of the steam separator 2 disposed in the boiler 1, comprises setting a proportional target water level of the steam separator 2 on the basis of supply water temperature, burning capacity and steam pressure in the boiler 1, detecting water supply temperature, burning capacity and steam pressure in operating the boiler 1, specifying the proportional target water level on the basis of the detected values, detecting an actual water level of the steam separator 2 by a water level detecting means 13, constantly calculating the difference between the specified proportional target water level and the actual water level, and controlling the water supply to the boiler 1 so that the water supply to the boiler 1 is stopped when the actual water level is over the specified proportional target water level, and the water is supplied to the boiler 1 to reach the specified proportional target water level when the actual water level is lower than the specified proportional target water level.
