<P>PROBLEM TO BE SOLVED: To provide a stem Wakame(Undaria pinnatifida) processed food with light and favorable mouthfeel while having the flavor inherent in Wakame, and to provide a method for producing the processed food. <P>SOLUTION: The method for producing the stem Wakame processed food comprises the following procedure: stem Wakame chopped to a specified size is dried to adjust its moisture content to 10-30 wt.% and then heated with steam at 190-240°C and swollen, thus obtaining the objective food, i.e. a kind of snack-fashioned baked confectionery with a hard crust 14 and porous spongy contents 15. <P>COPYRIGHT: (C)2005,JPO&NCIPI |
