PROBLEM TO BE SOLVED: To provide a fryer of easy maintenance, capable of reducing oil consumption, restricting contamination of oil fluid, and promoting uniformity of temperature in an oil tank. SOLUTION: On the lower surface side of a bottom plate 18 of the oil tank, a tight adhesion sheet 27 is applied to the whole front surface, and a plurality of heater elements 28 are provided on a lower surface through the tight adhesion sheet 27 in a direction crossing a food carrying direction at predetermined intervals. Each heater element 28 has an oblong cross section, with an upper surface disposed in contact with the lower surface of the tight adhesion sheet so as to be heated through the bottom plate efficiently transmitting heat.
