PROBLEM TO BE SOLVED: To provide a method that can produce a slightly acidic milk beverage in which the flavor and eat-texture is good, and the quality and physical property are stable.SOLUTION: Provided is a method for producing a slightly acidic milk beverage, and including: a preparation process for separately preparing a milk raw material containing a milk component, and an acid raw material containing an acid component; a blending process for blending carboxy methyl cellulose or a salt thereof into either the milk raw material or the acid raw material; a sterilization process for separately sterilizing the milk raw material and the acid raw material; and a mixing process for mixing the sterilized milk raw material and the sterilized acid raw material, to prepare a protein aggregation-suppressed slightly acidic milk beverage.SELECTED DRAWING: None |
