PROBLEM TO BE SOLVED: To provide high-calory packaged boiled rice having the same texture as that of ordinary boiled rice.SOLUTION: High-calory packaged boiled rice is obtained by: subjecting raw material rice to rice-washing processing followed by storing in a sealed container; performing softening processing by soaking the product in a preparation solution which contains two or more enzymes having different decomposing objects, selected from proteolytic enzyme, cellulose decomposing enzyme, starch decomposing enzyme and lipid decomposing enzyme; subjecting softened rice obtained by performing enzyme reaction stop processing after the softening processing to surface hardening processing of gelatinizing the surface by steam heat processing followed by radiation-cooling; and packaging the surface hardened rice to bring to the cooked rice by cooking water to bring a moisture content to 44-56% after cooking.SELECTED DRAWING: Figure 1 |
