RICE PROTEIN COMPOSITION AND ITS USE

PROBLEM TO BE SOLVED: To provide a rice protein composition that can lower a cholesterol level other than the blood cholesterol level and has a wide application range, and its use.

SOLUTION: The rice protein composition derived from rice is obtained by neutralizing with an acid, followed by drying, a supernatant liquid obtained by dissolving in an alkali solution a high indigestible protein rice having a high content of a highly indigestible protein and exhibits a liver cholesterol-lowering action and a blood serum cholesterol-lowering action. The alkali treatment together with the acid treatment of rice gives the rice protein composition having the liver cholesterol-lowering action and also gives a raw material having no concern about adverse effects because it is derived from rice taken as the staple food.
