<P>PROBLEM TO BE SOLVED: To provide an apparatus and a method for extruding a puffed food by which a new appearance is given and a new texture is imparted, and to provide the puffed food. <P>SOLUTION: The apparatus for extruding the puffed food is equipped with a pressurizing part 10 for pressurizing an introduced raw material, first nozzle holes H1 optionally selected from among n nozzle holes for leading out the pressurized raw material, second nozzle holes H2 adjacent thereto and formed at an interval so as to mutually contact dough when the raw material is led out of both the nozzle holes H1 and H2 to form a puffed dough and a nozzle 20 in which the periphery on the side leading out the raw material of the n-pieces of nozzle holes is depressed from the tip surface 20s. The apparatus is composed so that the dough led out of the n-pieces of nozzle holes and puffed becomes a puffed food integral as the whole. When the puffed food is produced by using the apparatus, the puffed food having a plurality of mutually bonded and puffed granular materials which are bonded during distribution and loosened in a mouth when eaten, assuming the new appearance and having the new texture is obtained. <P>COPYRIGHT: (C)2007,JPO&INPIT |
