PURPOSE:To provide composition obtained by mixing a specific monoglyceride with a plant sterol under melting and pulverizing the mixture, dispersible in water at a low temperature compared with conventional composition and giving a gel returning to dispersed state by lowering the temperature. CONSTITUTION:The monoglyceride composition is produced by melting and mixing (A) 60-95wt.% of a monoglyceride having saturated fatty acid group and (B) 5-40wt.% of a plant sterol and pulverizing the mixture. Preferably, the component A is composed of one or more kinds of monoglycerides derived from 12-22C saturated fatty acid and the component B is beta-sitosterol, campesterol, etc. |
