摘要 Preparation of dough portions by extrusion under low pressure. The dough mass in funnel (7) gravitates into cylinder (1). This cylinder has a rectangular cross-section with the longest side horizontal. The closure (4) has a number of circular openings (5) through which the dough is extruded. A piston (12,13), together with an apron (14), provides the driving force for the extrusion by pneumatic cylinder (11). Initially openings (5) are closed by a pneumatically operated guillotine knife (21). The pressure in cylinder (11), which is proportional to the pressure on the dough, is monitored so that the guillotine frees openings (5) when the pressure on the dough is between 2 and 3 bar. A measuring device (15,16,17,18) indicates the travel of the piston, and hence the size of the dough portion, and triggers the action of the guillotine to sever the portions and close the openings (5). Alternatively a photoelectric switch could be used. A processor (25) controls the operations.
