Provided is a method for preparing a green tea tile fish which is free from the fishy smell or offensive odor and the acidification during storage and circulation and is improved in taste. The method comprises the steps of salting a tile fish in an antibacterial agent comprising an organic acid and ethanol and firstly drying the tile fish; and mixing a green tea extract and a sugar alcohol as a moisturizer and soaking the tile fish in the mixture and secondly drying the tile fish. Preferably the sugar alcohol comprises 1-3 wt% of at least one selected from sorbitol, maltitol, mannitol, glycitol, erythritol, ribitol, xylitol, galactitol and hydrogenated starch syrup; and the organic acid is at least one selected from acetic acid, citric acid, tartaric acid, malic acid, succinic acid and benzoic acid. |
