A ring slicer with easily removable knife (36) and knife assembly (60). According to one aspect of the invention, a ring assembly comprises two end plates (18) for rotation about an axis of rotation. Each of the knife assemblies (60) comprises an elongate knife (36) having a cutting edge extending along an elongate axis, a base (64), and a clamp (62) for clamping the knife to the base.
