<p>Antifreeze proteins which can be derived from the lichen Nephroma arcticum and proteins having antifreeze activity having an amino acid sequence part of which shows at least 80% overlap with the amino acid sequence L-V-I-G-S-T-A-Q(E)-N-F-G-V-V(S)-A-A-A-T, as well as modified versions thereof. Methods for their preparation, their use in food processing and food compositions comprising them are also described.</p> |
