PROBLEM TO BE SOLVED: To provide a method for producing mannitol in high productivity and yield by optimizing the culture conditions. SOLUTION: This invention relates to a mannitol-producing-new strain, Candida magnoliae (deposited under No.KCCM-10252) separated from the fermentation sludge of a xylitol-producing factory and a method for the production of mannitol in high yield and productivity by using the new strain, Candida magnoliae and optimizing various culture conditions and medium composition.
