<P>PROBLEM TO BE SOLVED: To provide an oil and fat composition firm before baked so as to have good workability, getting soft after baked, and making palate feeling of bread/confectionery after baked crispy and favorable: and to provide a method for producing the composition. <P>SOLUTION: The method for producing an oil and fat composition containing solid oil and fat having 30-70 wt.% of SFC (solid fat content) at 20°C and liquid oil and fat having 0-5 wt.% of SFC (solid fat content) at 0°C comprises crystallizing the solid oil and fat having 30-70 wt.% of SFC at 20°C first of all, and then adding the liquid oil and fat having 0-5 wt.% of SFC at 0°C to the solid oil and fat.
