PURPOSE:To separate mucilaginous substances from stringy 'NATTO' (fermented soybeans) without killing Bacillus NATTO by adding water to the stringy 'NATTO', sufficiently kneading the 'NATTO' and treating the kneaded 'NATTO' in a centrifuge. CONSTITUTION:Bacillus NATTO is sprinkled over pressurized and boiled or steamed soybeans and fermentation is carried out to provide stringy 'NATTO'. A liquid at ordinary temperature, e.g., preferably water in an adequate amount is then added and kneaded therewith. Thereby, mucilaginous substances are sufficiently mixed with water. The resultant mixture is subsequently charged into a centrifuge, which is then operated to separate the mixture of the water with the mucilaginous substances from the soybeans. |
