PURPOSE:To prepare a fermented malt drink having excellent clouding resistance and refreshing taste by precipitating and removing a component to generate chill-clouding and freeze-clouding defects and a coarse taste component generated in the process for the preparation of a fermented malt drink. CONSTITUTION:A fermented malt drink is prepared by fermenting wort by a primary fermentation process, slowly cooling the produced fermented wort to a temperature range near the freezing temperature, supplying the chilled fermented wort to a secondary fermentation process by flowing in supercooled state and fermenting by the secondary fermentation process. |
