<P>PROBLEM TO BE SOLVED: To provide an oil-in-water emulsified oil and fat composition capable of offering white sauce-like food having rich milk flavor and excellent aftertaste, and to provide the white sauce-like food having rich milk flavor and excellent aftertaste by using the composition. <P>SOLUTION: This oil-in-water emulsified oil and fat composition contains 0.5-5.0 wt.% of milk protein and 1.0 wt.% or below of glucide in the whole composition. Furthermore, the oil and fat composition contains organic acid monoglyceride, and 0.06-0.30 wt.% of sodium in the whole composition. The white sauce-like food which is obtained by using the oil-in-water emulsified oil and fat composition is also provided. <P>COPYRIGHT: (C)2008,JPO&INPIT |
