PURPOSE: To obtain a flocculant high in flocculation activity, extremely high in safety and capable of being adapted even to food by usingγ-polyglutamic acid as the flocculant. CONSTITUTION: Bacterial cells are separated from a culture medium ofγ- polyglutamic acid-forming bacteria such as Bacillus subtilis or Bacillus natto and alcohol is added to the supernatant soln. to separate and purifyγ- polyglutamic acid. Whenγ-polyglutamic acid is used as a flocculant and metal ions such as Ca<2+> or Mg<2+> are added, flocculation activity can be further enhanced. The flocculant thus obtained has high safety not damaging environment or a human body and high flocculation activity. Whenγ-polyglutamic acid is used as a flocculant, the use amt. thereof is arbitrary but desirably 5-50mg/l, more desirably, 5-30mg/l. When the use amt. exceeds 60mg/l, flocculation activity lowers. Use temp. is room temp. to 70 deg.C and the flocculant is pref. used within an acidic - neutral region.
