PROBLEM TO BE SOLVED: To provide a method for obtaining high quality xylitol-containing candy for short time.SOLUTION: A manufacturing method of a candy composition is constituted by a process of heating and melting a saccharide composition part containing xylitol as a main component and other saccharide to obtain a molten liquid, a process of adding a crystal of the xylitol to the molten liquid to initiate crystallization, a process of adding a crystallization promoter for promoting the crystallization of the xylitol when predetermined crystal amount is reached to the molten liquid of the saccharide composition which is over cooled to predetermined temperature and a process for using a material having a slid residual article as the molten liquid when 0.5 g or powder of the crystallization promoter to 100 g of the molten liquid of the saccharide composition part maintained at 90°C and stirring it for 30 minutes.SELECTED DRAWING: Figure 1
