PURPOSE:To obtain an alkaline protease utilizable for processing foods, industry, a detergent, etc., for the purpose of hydrolyzing proteins within a low- temperature region. CONSTITUTION:The objective alkaline protease is produced by culturing a strain of the genus Xanthomonas, specifically Xathomonas sp. S-1 (FERM P-12087) culturable at a temperature within the range of 10-20 deg.C in a nutrient culture medium. This alkaline protease has about 40 deg.CC optimum temperature, but the activity even within the low temperature region. Furthermore, the objective method for producing the alkaline protease is provided. |
