PROBLEM TO BE SOLVED: To provide a method by which the content of sotolone, i.e., the content of 3-hydroxy-4,5-dimethyl-2(5H)-furanone which is a spice containing fenugreek can efficiently be increased. SOLUTION: A spice containing fenugreek is heated in the presence of at least one kind selected from ascorbic acid, its ester and its salt at >=100 deg.C temperature for >5 min time and, as necessary, aged to increase the content of sonotolone. |
