PROBLEM TO BE SOLVED: To obtain a cooked rice food having good loosening processability and durable to freezing and refrigeration storage while keeping the appearance, palatability and taste of conventional cooked rice food and provide its production process. SOLUTION: The objective cooked rice food having good loosening processability and durable to freezing and refrigeration storage is produced while keeping the appearance, palatability and taste of conventional cooked rice food by adding a decomposed starch free from monosaccharides, disaccharides and trisaccharides to a cooked rice food composed of nonglutinous rice and/or glutinous rice during or after the cooking of the rice. |
