PROCESS OF PRODUCING EDIBLE OIL CONTAINING DIACYLGLYCEROL

A preparation method of edible oil containing diacylglycerol is provided to allow diacylglycerol to be selectively and efficiently synthesized through an enzymatic reaction by using algae oil and soybean oil which are rich in DHA and have no unpleasant smell, and cause no environmental pollution. A preparation method of edible oil containing diacylglycerol comprises the steps of: (a) selecting mixed oil as a substrate, wherein the mixed oil is made by mixing algae oil and soybean oil in a weight ratio of 1:1~1.5~1, putting lipozyme RM IM in the mixed oil, and performing transesterification without a solvent; (b) mixing the transesterified substrate and glycerol in a mol ratio of 2:1~2:1.5, putting lipozyme RM IM in the mixture, and performing enzymatic glycerolysis; (c) performing filtering, refining and concentrating processes to remove n-hexane; (d) removing free fatty acid through a deoxidation process; and (e) removing the remaining water and impurities.
