The invention relates to foods, dietetic foods, food addtives and medicaments based on yeast and spent cereal mash (spillage), which may be digested and which may be freed from husks, with or without other nutrients, nutrient additives, aroma substances and/or flavourings. These preparations contain gelling agents which completely neutralise the typical taste and aroma of yeast and spent cereal mash. The gelling agent can also be added directly to the spent cereal mash after the latter has exited from the kiln, so that further treatment can be omitted. However, it is also possible to add the gelling agent even after the conventional processes have been applied, and to further process the mixture to give outstanding products.
