<P>PROBLEM TO BE SOLVED: To obtain a functional food material having an enriched phytic acid content, and to provide a food containing the same. <P>SOLUTION: A method for producing the food material having the enriched phytic acid content comprises mixing grain tissue flour comprising the seed embryo bud-free skin layer portions (for example, rice bran or bran) of grains or beans with water in an amount of 30 to 60 mass % based on the mass of the grain tissue flour and then maturing (an enzymatic conversion reaction) the mixture to enrich the phytic acid. Thereby, the food raw material capable of contributing to the prevention of life-style related diseases can be produced. Since the grain tissues comprising the skin layer portions of the grains or beans are used in the method, albumen is not contained. Therefore, the action of α-amylase, the propagation of bacteria, and toxins produced by the bacteria may not be considered. <P>COPYRIGHT: (C)2005,JPO&NCIPI |
