<P>PROBLEM TO BE SOLVED: To provide a method for producing Sashimi (sliced raw fish) for Ochazuke (cooked rice soaked in hot tea): and to provide delicious Sashimi Ochazuke using the Sashimi. <P>SOLUTION: The method for producing Sashimi for Ochazuke comprises the following process: a first process of eliminating unnecessary parts such as shells, scales, head, bowels and bones from fish and shellfish; a second process of subjecting the fish and shellfish treated in the first process to treatment with a freshness-keeping and antioxidant solution; a third process of eliminating fish fat from the fish and shellfish treated in the second process; a fourth process of sealing delicious taste of the fish and shellfish treated in the third process and also eliminating fishy smell from the fish and shellfish treated in the third process; and a fifth process of freezing the fish and shellfish treated in the fourth process so as not to be dried to obtain Sashimi for Ochazuke not inferior to Sashimi comprising fresh fish and shellfish. <P>COPYRIGHT: (C)2005,JPO&NCIPI |
