PLASTIC EMULSIFIED FAT AND METHOD OF ITS PRODUCTION

Plastic emulsified fat of emulsion type "water in oil" contains from 52 to 60 percent by weight of hardened rape-seed oil with low contents of erucic acid, from 12 to 18 percent by weight of rape-seed oil with low contents of erucic acid, from 5 to 10 percent by weight of pork fat, from 10 to 20 volume percent of whipped-in nitrogen and other common additives. It is prepared by emulsification, introduction of nitrogen gas into emulsion and homogenisation of the obtained dispersion in wipe-off cooler at 10 to 18 degrees C
