PURPOSE:To obtain silk-strained soybean cured using bittern by injecting a coagulant solution into the soybean milk flowing a soybean milk feed pipe, charging a coagulating box with the soybean milk followed immediately by agitating it with an agitating board. CONSTITUTION:Soybean milk is first fed from a soybean milk tank 14 into a soybean milk feed pipe 10, while a coagulant in a coagulant tank 20 is allowed to flow into a coagulant injection pipe 26 and an appropriate amount of the coagulant is injected into the soybean milk at the delivery port 10d. On charging a coagulating box 44 with the coagulant-incorporated soybean milk, the soybean milk 41 is immediately agitated with an agitating board 44. The coagulant is bittern containing mainly of magnesium chloride. |
