This process consists in mincing the meat from a variety of tuna, in a proportion of from 60 to 80%, together with pancetta (salted pork belly), of from 10 to 30%, and kneading this with water, of between 10 and 30%, together with seasoning, this mixture then being pressed and the item shaped. It is then individually packed and/or packaged and incorporated into the cold chain.
