PROBLEM TO BE SOLVED: To provide a method of producing an oligosaccharide which is capable of efficiently producing a high-purity oligosaccharide being highly versatile and having low-cost, from a neutral polysaccharide, and a method of producing an oligosaccharide derived from a neutral polysaccharide which is excellent in molecular weight control and reproducibility of oligosaccharide, and capable of obtaining a desired oligosaccharide with high purity.SOLUTION: The method of producing an oligosaccharide which produces an oligosaccharide by hydrolyzing at least one neutral polysaccharide selected from agarose, xylan, and glucomannan, includes the step of supplying an aqueous solution of a hydrolyzing agent to the neutral polysaccharide, the step of hydrolyzing the neutral polysaccharide, and the step of recovering the oligosaccharide from the hydrolysate of the neutral polysaccharide. |
