摘要 Continuous treatment (M1) of chocolate at 32 - 35 deg C comprising suspending heat-treated seed crystals in part of the chocolate mass and mixing it into the remainder of the mass which has been pre-cooled, is new. An Independent claim is included for apparatus for performing (M1) comprising: (a) a tank for heated liquid chocolate; (b) a pump which feeds the chocolate from the tank via a line to a heat exchanger unit with a cooler and mixer; and (c) a dosing pump connected to a line for adding seed crystals in suspension to the main chocolate mass at the start of the mixing stage.
