PURPOSE: A method of making a health supplementary food product using an extract of a mushroom cultivated in the culture medium containing selenium and a preservative is provided. The food product is harmless to the human body and contains selenium as an essential mineral and is thus useful for maintaining good health. CONSTITUTION: The mushroom cultivated in the culture medium containing selenium is heated, ground and then extracted at a temperature of 40 to 100deg.C for 10 to 6,000min. Then, 1L of the obtained mushroom extract is agitated with 10 to 1,000g of a preservative for 1 to 5hr and then diluted in a dilution ratio of 10 to 1,000 times. The mushroom contains 100 to 1,000μ g/100g. The preservative is any one of benzoic acid, sodium benzoate, dehydroacetic acid, sorbic acid, p-hydroxybenzoate ester, sodium propionate or calcium salt. The mushroom is at least one selected from Flammulina velutipes, Pleurotus ostreatus, Phellinus linteus and Agaricus bisporus mushroom.
