The invention relates to a method for preparing a low-fat cheese and to the low-fat cheese obtained according to this method. More in particular, the invention relates to a method for the preparation of a low-fat cheese which method comprises a step in which a whey-protein concentrate is added to cheese milk, and the cheese milk is subjected to a step in which the lactose content is reduced e.g. by ultrafiltration.
